What is kaffir lime leaf?

Kaffir lime leaf (Citrus hystrix) is the leaf of the kaffir lime, called "bai makrut (ใบมะกรูด)" in Thailand. With a citrus aroma stronger than lemon or lime, it has been used to scent soups and curries in Thai cooking, and as a refreshing herb in traditional medicine. In Thailand it is recorded as having been used to care for the teeth and gums, and the kaffir lime is reported as having been treated as a carminative herb. The leaf's aroma is led by citronellal.
